The only bad thing about it is the pork chunks in it, but other than that the sauce is completely fine.

After that, just follow the recipe.
Gourmand Gabe: "Alright, uh...follow the recipe. Got it." Gourmand starts cooking, following the recipe as best he can.

I think you should, especially the truffles. That'll give it a very earthy taste.

You should also try adding in some mushrooms, especially ones like shiitake or oyster mushrooms. They have a great earthy taste that pairs really well with the meat.
